Homemade Pizza Dough

INGREDIENTS

950 ml (4 cups) all-purpose flour
30 ml (2 tbsp.) olive oil
300 ml (1 ¼ cups) warm water (not too hot!)
10 ml (2 tsp.) fast-rising yeast
10 ml (2 tsp.) honey or syrup or sugar
10 ml (2 tsp.) salt

Preparation

In a bowl, mix together the water, yeast and sugar. Let stand 5 to 7 minute until it foams.

In a large bowl, mix together flour and salt. Create a well in the middle.

Add the water and yeast mixture along with the olive oil to the well.

Work the flour into the liquid. Mix until well incorporated.
On a lightly floured work surface, knead the dough for about 5 minutes.

Oil a clean bowl. Make a ball out of the dough and place in the bowl. Cover with a clean, slightly dampened dish cloth.
Transfer the covered bowl to the oven (oven off!) but with the oven light on. Let rise about 1-1/2 hours or until dough doubles in volume.

Once the dough has really puffed up, divide into 4 equal parts and make balls with them.

You can use the dough immediately or refrigerate or freeze it for use later on.

Shape and flatten the dough on a lightly floured surface.
