Flammekueches Pizza with Salami

1 ball pizza dough
75 g Nostrano summer salami, cut into strips
75 g grated gruyère cheese
45 ml (3 tbsp.) heavy 35% cream
1 small onion, minced
15 ml (1 tbsp.) butter
Grated nutmeg
Salt and freshly ground pepper


Remove dough from fridge, cover and let stand for 30 minutes.
Preheat oven to 400°F (200°C).
In a small pot bring cream to a boil. Remove from heat and season with nutmeg, salt and pepper. Whisk in half the grated cheese. Set aside.
Shape dough by hand on a floured work surface. Place on a lightly oiled baking sheet. Spread cream mixture evenly over top.
Top evenly with salami, remaining grated cheese and finish with the onions.
Bake 15 minutes or until cheeses are melted and starting to brown.
