Tomatoes with Fresh Mozzarella with a Genoa Sausage Crown

4 medium-sized tomatoes
Freshly ground pepper
1 Genoa Sausage
1 ball fresh mozzarella (buffalo, if possible)
Basil leaves
Fleur de sel


Preheat broiler or, depending how motivated you are, the pizza oven.
Cut sausage in two lengthwise.
Make long, thick cuts on the bias. These pointy slices will be inserted into the tomatoes.
Cut tomatoes in two horizontally. Place flesh-side up on a baking sheet.
Dry under a very hot broiler for about 4 minutes.
They need to heat through and may blacken here and there but they mustn’t cook.
Remove from oven, season with pepper and insert sausage slices into each tomato around the periphery to make a crown.
In the centre, add a slice of cheese and return to oven to warm the cheese.
Remove as soon as sausage tips begin to brown.
Upon removal from oven, garnish with basil leaves and fleur de sel flakes and serve.
