French Toast with Goat Cheese, Capiccollo and a Sunny Side Up Egg

INGREDIENTS

One log fresh goat cheese
1 tbsp. olive oil
2 tbsp. chives, minced
Fresh ground black pepper
1 egg, beaten
½ c. milk
1 tbsp. maple syrup
4 slices bread
1 tbsp. butter
2 eggs
6 slices Nostrano Mild Capiccollo

Preparation

In a bowl, combine the fresh goat cheese, olive oil, minced chives and pepper. Set aside.
In a large bowl, mix the egg, milk and maple syrup. Dip each slice of bread into the mixture so the bread soaks it up. Place slices on a plate until ready to cook.
In a large frying pan, melt the butter over medium-low heat. Place two slices of bread at a time in the pan. Brown 2 minutes per side, turning with a spatula. Continue with the other 2 slices of bread.
In a second frying pan, cook the eggs sunny side up and season with salt and pepper. Set aside.
Spread one slice of French toast generously with the goat cheese mixture, add slices of mild capicollo then place a second slice of French toast on top.
Crown with a sunny side up egg, garnish with greens and serve immediately.
