Nostrano Picante Pizza

1 ball pizza dough
50 g Nostrano spicy capicollo
50 g Nostrano spicy Genoa salami
50 g Nostrano Calabrese sausage
75 g mozzarella cheese
75 ml Marinara sauce
75 ml spicy eggplant caponata or roasted eggplant
25 g dried tomatoes, cut into strips
5 pitted black olives, halved
1 cup arugula
15 ml (1 tbsp.) olive oil
Flaked red pepper, to taste
Salt and fresh ground pepper


Remove dough from fridge, cover and let stand 30 minutes.
Preheat oven to 400°F (200°C).
Form dough by hand on a lightly floured work surface. Place on a lightly oiled baking sheet. Spread with Marinara sauce. Bake dough with sauce for 5 minutes. Remove from oven.
Top evenly with capicollo, Genoa salami, Calabrese sausage, eggplant and dried tomatoes. Add cheese and finish with black olives.
Bake 10 minutes or until cheese is melted and starting to brown.
In a bowl combine arugula with olive oil and season with red pepper flakes to taste and salt and pepper. Set aside.
Remove pizza from oven and top with arugula mixture.
